Crispy Chicken Caesar Salad (serves 2)

Ingredients

For the chicken

  • 4 tbsp plain flour
  • 1 medium egg, whisked
  • 100g breadcrumbs
  • 15g Parmesan cheese, grated, plus extra for serving
  • 2 chicken breasts, cut in half lengthways and lightly bashed
  • Vegetable oil for shallow frying
  • 1 huge romaine lettuce, roughly chopped
  • 4 radishes
  • 1 tbsp olive oil

 

For the dressing

  • 70g mayonnaise
  • 2 tsp white wine vinegar
  • 2 tsp Worcestershire sauce
  • 2 tsp water
  • 1 tsp Dijon mustard
  • 1 clove garlic, grated
  • 10g Parmesan cheese, grated
  • Salt and pepper

 

Method

Prep the chicken

Step 1: In three separate dishes – place flour in the first and season with salt and pepper. Put eggs into the second. And mix breadcrumbs, Parmesan and plenty of salt and pepper into the last dish.

Step 2: Dust the chicken in flour, dip into the eggs and then cover in breadcrumbs.

Step 3: Heat the oil for shallow frying in a non-stick frying pan over a high heat. Cook the chicken for 3-4 minutes a side or until golden and cooked through.

Step 4: Remove from the oil and season with salt.

Prep the salad

Step 1: Wash the lettuce and spin dry with the iconic and original OXO Salad Spinner and then use the OXO Precision Handheld Mandoline to slice the radishes.

Step 2: Whisk together all the ingredients for the dressing with a pinch of salt and pepper. the dressing over the salad and toss together. Divide between two serving plates.

Step 3: Slice up the chicken and place on top of the salad and rain down a load of extra Parm.
