Lemon Herb Chicken Flatbreads (makes 3–4)
- 2 large chicken breasts (diced)
- 1 tin chickpeas (drained)
- Juice + zest of 1 lemon
- 2 cloves garlic (pressed)
- 1 tbsp olive oil
- 2 tsp oregano
- Courgette (sliced)
- Red onion (sliced)
Step 1: In a large silicone bag, combine diced chicken breasts, chickpeas, lemon juice + zest, garlic, olive oil and oregano.
Step 2: Add courgette and red onion slices (mandoline-prepped).
Step 3: Store in the fridge (2 days) or freezer (1 month).
Step 4: When ready to eat, tip onto a tray and oven grill for 12-15 mins at 200°C.
Step 5: Serve in flatbreads with feta, yoghurt + parsley.
